I made a strawberry double Fromage cheesecake with an elegant and lovely color ~
You can enjoy two kinds of cheesecake together because it is a rare cheesecake made with mascarpone cheese on top and baked cheesecake with strawberry powder on the bottom ~
Bake the Genuine with a pink color that goes with the strawberry, and put it on the outside and harden the raspberries on the rare cheesecake layer to make it feel more lovely ~
When you cut it, it is a luxurious and elegant cheesecake because it contains neat strawberries ~
When baking cheesecake, put Teflon sheet inside the mold and it will be easier to separate from the mold ~
I baked the cake with strawberry powder and put fresh strawberries so it was so tasty that I could eat it more freshly ~
If you match the color of Genuise with the color of baked cheesecake, it will look cleaner and more pretty ~~
It looks like a lovely and cozy cheesecake just by looking at it ~

Ingredients

  • 3 Egg 
  • 75g Sugar
  • 8g Honey 
  • 2g Vanilla extract
  • 25g Unsalted butter 
  • 40g Milk
  • 90g Cake flour
  • Pink food coloring

  • 200g Cream cheese
  • 40g Sugar
  • 1 Egg
  • 2g Vanilla extract
  • 3g Lemon juice
  • 40g Whipping cream
  • 6g Cake flour
  • 5g Strawberry powder
  • Pink food coloring

  • 150g Mascarpone cheese
  • 30g Sugar
  • 2g Vanilla extract
  • 3g Gelatin sheet
  • 150g Whipped cream (whipped up 50%)

Instructions

  1. Place the egg bowl on a pot of hot water, add sugar, honey, and vanilla extract and stir until the temperature reaches 40 degrees.
  2. Whip until a rich ivory-colored foam with a hand mixer, add pink edible color to color, sieve, and mix.
  3. Take a little bit of dough into a bowl of melted unsalted butter and milk (temperature 50-60 degrees), mix, put in the main dough, mix, pour into an 18cm mold and bake in an oven preheated to 170 degrees for 30 minutes.
  4. Cut the top and bottom of the cooled sheet and cut it into 2 pieces.
  5. Gently loosen the cream cheese, add sugar, mix, add egg, vanilla extract, and lemon juice.
  6. Add fresh cream, mix, sieve with flour, mix with strawberry powder, add pink food coloring to color.
  7. Lay a sheet of cake on the bottom of a 15cm mold, pour the cheesecake dough, bake in an oven preheated to 150 degrees for 25 minutes, cool at room temperature, and cool in the refrigerator.
  8. Add sugar, vanilla extract to mascarpone cheese, gently loosen, add melted gelatin, mix, add 50% thinly whipped cream, and mix.
  9. Put the strawberries cut in half on the cooled cheesecake, pour the cheesecake dough, flatten it, and harden for 2 hours in the refrigerator.
  10. Cut out the rim of one remaining cake sheet and filter it through a sieve.
  11. Take the hardened cheesecake out of the mold, apply a little bit of the remaining cheesecake batter, and apply the cake sheet powder.
