I made a cute castella cupcake with a swollen shape ~
Itโs a basic cake that can be easily made and eaten, so I think itโs often made ~
The temperature of the dough is warmed to about 40 degrees to give a rich and dense foam, so that the finished and soft cake is baked ~
It has a crispy texture on the top, and the inside is fluffy, so it feels like a sponge ~ ^^
Itโs made by reducing sugar, so itโs not too sweet.
Itโs not moist, so you can eat it more deliciously with milk.

Ingredients
- 100g Egg
- 65g Sugar
- 10g Honey
- 2g Vanilla extract
- 25g Unsalted butter
- 25g Milk
- 80g Cake flour
- 2g Baking powder
Instructions
- Place a bowl of eggs on a pot of hot water, add sugar, honey and vanilla extract and stir until the temperature reaches 40 degrees.
- Whip until a rich ivory-colored foam with a hand mixer, sift through the flour and baking powder and mix.
- Put a little bit of dough in a bowl mixed with melted unsalted butter and milk (temperature 50 ~ 60 ยฐ C), mix, put into the main dough, mix, pour into muffin mold and air bubbles.
- Bake and cool for 20 minutes in a preheated oven at 170 degrees.
