I made a delicious strawberry cake with plenty of fresh strawberries~
I used only two cake sheets, top and bottom, and filled the middle with strawberries, so it felt like eating strawberries with cream~~^^
When I put strawberry chocolate in the cream, it smells like strawberries and seems to harden well~
I cut the strawberry in half and put it on the top, and it looks lovely and pretty, so it goes well with the cake~*^^*
After putting it in the mold, you need to harden it in the refrigerator for at least 2 hours to prevent it from crumbling, so I think it should be hardened for at least 2 hours.
It can be made without icing, so it is a little easier and simpler to make.

Ingredients
- 155g Egg
- 110g Sugar
- 10g Honey
- 2g Vanilla extract
- 30g Unsalted butter
- 45g Milk
- 100g Cake flour
- 300g Whipped cream_whipped up 70% (+15g sugar)
- 50g Melted strawberry chocolate
Instructions
- Place a bowl of eggs on a pot of hot water, add sugar, honey, and vanilla extract, and stir until the temperature reaches 40 degrees.
- Whip with a hand mixer until it becomes a rich ivory-colored foam, then sift the soft flour and mix.
- Put a little of the dough in a bowl of melted unsalted butter and milk (temperature 50-60 degrees), mix, put in the main dough, mix, pour into an 18cm mold, and bake in an oven preheated to 170 degrees for 30 minutes.
- Cut the top and bottom of the cooled cake sheet and cut it into 2 pieces.
- After slicing strawberries, place them on a kitchen towel to remove moisture.
- Add sugar and 70% whipped cream with melted strawberry chocolate and a little red food coloring, and mix to make cream.
- Put a sheet in a 15cm mousse mold, apply cream, put strawberries, and apply cream. Repeat 2 more times.
- Put the sheet on top, fill the mold with cream, and harden it in the refrigerator for 2 hours.
