Strawberry Charlotte (Mousse cake)

Ingredients

Strawberry Mousse

  • 6g Powdered gelatin
  • 23g Cold water
  • 83g Strawberry puree
  • 15g corn syrup
  • 2ts + 1/4ts Lemon juice
  • 75g Whipped cream
  • Crushed sponge cake
  • Cream cheese
  • Lady finger cookie
  • Fruit flavored jelly

Instructions

  1. Put the powdered gelatin in cold water and soak it for at least 10 minutes.
  2. Mix strawberry puree + oligosaccharide + lemon juice, heat in the microwave for 30 to 60 seconds, add soaked gelatin, and mix.
  3. Add cream cheese to the crushed sponge cake and mix, then lay flat on the bottom of the mousse mold.
  4. Add cooled strawberry puree to whipped cream, mix, pour into mousse mold and harden in freezer for 30 minutes.
  5. Remove the mousse cake from the mousse mold, put lady finger cookies on it, and decorate with ribbon and fruit-flavored jelly. ​
