No-Bake Two-Tier Strawberry Cheesecake Recipe

I made a no oven cheesecake with two layers around strawberries ~
I cut the strawberry in half and put it on the side.

I filled the whole strawberry in the middle, but even if I cut it, I can see the strawberries.
I made strawberry puree and poured it thinly on the top to harden it.

It was really delicious with lots of strawberries

No-Bake Two-Tier Strawberry Cheesecake Recipe

Ingredients

  • 90g Lotus cookies
  • 40g Melted unsalted butter

  • 350g Cream cheese
  • 95g Sugar
  • 5g Vanilla extract 
  • 15g Lemon juice 
  • 10g Gelatin
  • 210g Whipped cream (whipped up 50%)

  • 250g Strawberry
  • 50g Sugar
  • Red food coloring
  • 5g Gelatin

Instructions

  1. After crushing the lotus cookie and mixing it with the melted salt-free butter, put it in a 15cm mold, press it firmly, and put it in the refrigerator.
  2. Gently loosen the cream cheese, add sugar and mix, add vanilla extract and lemon juice and mix.
  3. Add melted Pangelatin and mix, add 50% whipped fresh cream and mix.
  4. On the inside wall of the 15cm frame, place the strawberries cut in half, pour a little cream cheese dough, put the whole strawberry in the middle, fill the dough, and flatten.
  5. Fill strawberry and dough in the same way on the 12cm frame with the wrap on the bottom and harden the two molds in the refrigerator for about an hour.
  6. Put strawberries and sugar in a saucepan, boil it to make a puree, cool, grind finely in a blender, add red food coloring, and melted Pangelatin and mix.
  7. Pour (6) on the hardened cheesecake and harden for 2 hours in the refrigerator.
  8. Remove the mousse and place the 12cm cake on the 15cm cake to finish.
