I made Penglisu, a representative snack in Taiwan.

The sweet flavor of the pineapple spreads in your mouth when you take a bite of the stuffing made by boiling pineapple with sugar and honey, wrapped in cookie dough, and baked.

In some cases, it is made by grinding pineapple, but I chopped it up into small pieces to preserve the texture.

Cookies tend to break easily, so handle them with care and bake them and let them cool completely so that they don’t lose their shape~^^

It’s savory and light like scones, so I think it goes well with pineapple.

I used a silicone mold because I had it, but I think you can use another mold, such as a mold or a muffin mold, or just shape it and bake it.

Ingredients

90g Unsalted butter
15g Powdered sugar
a pinch of Salt
18g Egg yolk
2g Vanilla extract
115g Plain flour
10g Almond powder
15g Corn starch
300g Pineapple
35g Sugar
a pinch of Salt
35g Honey

Instructions

Soften the butter, add sugar powder and salt, mix, then add egg yolk and vanilla extract and mix.
Sift wheat flour, almond flour, and cornstarch, mix until combined, wrap in plastic wrap, and rest in the refrigerator for 1 hour.
Cut the pineapple into small pieces, put it in a pot with sugar and salt, boil it, add honey, boil it without water, and then cool it.
Divide the dough by 25g, put it in a mold, put the pineapple in the middle, cover the top with the dough, and bake in an oven preheated to 170 degrees for 15 minutes.
Remove the cookies from the mold, place them on the oven pan, bake in the oven at 180 degrees for 10 minutes, and cool.
