I made a moist and fluffy milk bread.
I kneaded it by hand and I think it came out chewy and fluffy.

If you have a kneader, you can make it easier by kneading it with a kneader~.
The dough has a high water content, so it tends to stick to your hands a lot.

If you add butter and beat it, the dough becomes smooth and doesn’t stick as much.
I think it’s a pleasure to eat freshly made bread and tear it into pieces because it’s homemade.

Ingredients

  • 150g Milk
  • 35g Egg
  • 30g Sugar
  • 5g Salt
  • 4.5g Instant dry yeast
  • 10g Honey
  • 260g Bread flour
  • 35g Unsalted butter

  • Egg wash (1 Egg : 1 Milk)

Instructions

  1. in a bowl, whisk together the room-temperature milk, eggs, sugar, salt, and instant dry yeast.
  2. Mix in the flour and knead with your hands until no streaks of flour are visible.
  3. Knead for about 10 minutes, gathering with a scraper, then add the room-temperature butter and knead in.
  4. Knead for about 7 to 10 minutes, then place in a bowl, cover with plastic wrap, and let rise in a warm place.
    (until the dough has risen 2 to 3 times, about 1 hour)
  5. Remove the dough, divide it into 3 equal parts, roll into a ball, cover with plastic wrap, and let it rise for about 15 minutes.
  6. De-gas the dough, shape it with a rolling pin, place it in a mold, cover with plastic wrap, and let it rise until doubled in size, about 1 hour.
  7. When it has risen to the height of the mold, brush with egg wash and bake in a 160 degree oven for 26 to 28 minutes.
  8. remove from the oven, slap it on the bottom, turn it right out and brush with butter.
