This time, I made it with fresh cream and sour cream, and it was really delicious because it was more savory and flavorful.

If the scones I made before had a crunchy feel due to the small amount of butter, the scones I made this time have a crispy, moist and light feel rather than a prickly feeling.

I thought it would be delicious if I added sour cream, so I reduced the amount of whipped cream a little and added sour cream together, but it was more delicious than I thought~

After making it a few times, when I mix the powdered ingredients and add the liquid ingredients, I don’t add them separately, but if I mix them all together, I think it’s much more evenly mixed and the texture is good~

If you don’t have sour cream, I think it’s okay to add 120~130g of whipped cream and omit the sour cream~
Before resting the dough, shape it as straight as possible, rest it, and then bake it in a beautiful shape.

Ingredients

  • 250g Cake flour
  • 40g Sugar
  • 3g Salt
  • 8g Baking powder
  • 110g Unsalted butter
  • 80g Heavy cream
  • 60g Sour cream
  • 2g Vanilla extract
  • 1 Egg yolk + 20g Milk

Instructions

  1. Mix soft flour, sugar, salt, and baking powder in a bowl, add cold unsalted butter, and mix with a scraper until the butter is mixed with the flour and becomes small.
  2. Put fresh cream, sour cream, and vanilla extract into a lump, spread it out on a mat, repeat folding 4 times, wrap in cling wrap, and rest in the refrigerator for 1 hour.
  3. Divide the dough into 6 pieces, put it on the oven pan, mix egg yolk and milk and apply it on the top. Bake in an oven preheated to 190 degrees for about 20 minutes.
