I made a soft and chewy no-oven caramel pudding~
I did not bake it in the oven, but put gelatin to harden it.
The pudding made by heating has a slightly soft texture like a steamed egg, whereas the hardened pudding is chewy and melts softly.
In terms of texture, I think pudding hardened using gelatin is better and easier.
I made the syrup a little thicker using brown sugar and tried hardening it in various shaped containers, but the shape came out better than I expected~
If you want to keep the shape a little better, you can add about 2g of gelatin.

Ingredients
- 100g Dark brown sugar
- 100g Water
- 4 Egg yolks
- 60g Sugar
- 5g Vanilla extract
- 600g Hot milk (80℃)
- 10g Gelatin sheet
Instructions
- Put brown sugar and water in a pot and boil it until it thickens slightly. Put it in a container and put it in the refrigerator.
- Add sugar and vanilla extract to egg yolk and mix, then add hot milk and mix.
- Squeeze out the water from gelatin soaked in cold water for about 10 minutes, mix, and sift through a sieve.
- Pour into a container, cover and harden in the refrigerator for at least 3 hours.
