Ingredients

Tart sheet

  • 80g Plain flour
  • 15g Sugar powder
  • 5g Almond powder
  • a pinch of Salt
  • 45g Butter
  • 1 Egg yolk

Cheese Filling

  • 150g Cream cheese
  • 70g Mascarpone Cheese
  • 40g Butter
  • 35g Sugar
  • 70g Fresh cream
  • 20g Milk
  • 10g Corn starch
  • a pinch of Salt
  • 30ml Lemon juice
  • 1 Egg
  • 1 Egg yolk
  • 5ml Milk

Instructions

  1. Put wheat flour, sugar powder, almond powder and salt in a bowl and mix, then add butter and mix by hand until crumbly.
  2. Add the egg yolks and mix until they come together, and then rest in the refrigerator for 30 minutes.
  3. Roll out the dough and cut it out with a cutter, put it in a buttered muffin mold, poke a hole in the bottom with a fork, and bake in an oven preheated to 160 degrees for 10 minutes.
  4. Place a bowl on top of a pot of hot water, add cream cheese, mascarpone cheese, butter, sugar, fresh cream, and milk, mix, and remove from the pot when it dissolves gently.
  5. Mix cornstarch, salt, lemon juice, and eggs. Put them in a pot and boil over low heat until thickened, then cool in the refrigerator.
  6. Put the cheese filling on the tart sheet, apply a mixture of egg yolk and milk on the top and bake in the oven at 220 degrees for 8 minutes.
