Ingredients

  • Water (40℃) 40g Water (40℃)
  • 14 g dry yeast
  • Sugar 4g Sugar

Dough

  • Milk (40℃) 120g Milk (40℃)
  • 40g Melted Butter
  • Sugar 30g
  • Salt 4g
  • Egg 40g
  • 360g (180gx2) plain flour

Peeling

  • 80g Brown Sugar
  • 25g Melted Butter
  • Cinnamon powder 10g
  • Nuts (cranberries, walnuts, etc.)
  • olive oil
  • Egg Water

Instructions

  1. Mix water+yeast+sugar at room temperature for 10-15 minutes
  2. Put sugar + melted butter + egg + milk in a bowl and mix, then sieve the flour
  3. Add the puffed yeast mixture and mix, then sift the remaining wheat flour
  4. Hand knead for 10-15 minutes
  5. Apply a little olive oil to the surface of the dough, then wrap it and ferment it in a warm place for about 1 hour.
  6. When the dough is doubled in size, press it with your fist to release the gas and use a rolling pin to make a rectangular shape.
  7. Apply melted butter and sprinkle with cinnamon powder + brown sugar → nuts in order (leave the edges)
  8. Roll it into a roll and cut it into a trapezoid shape, with the narrow side facing up, press it with chopsticks to shape it.
  9. Transfer to oven pan, wrap and ferment for 30 minutes
  10. Apply egg wash
  11. 20 minutes in an oven preheated to 170 degrees
