Mini Deep Dish Pizza

Ingredients

Dough

  • 125g strong flour
  • 1/2 ts sugar
  • 1/2 tsp salt
  • 1/2 tsp dry yeast
  • Water (35℃) 100ml
  • 1 ts olive oil

Topping

  • tomato sauce
  • (+mushrooms, onions, olives, ham, etc.)
  • pizza cheese
  • parsley
  • basil

Instructions

  1. ​Put strong flour in a bowl and make 3 grooves, put salt, sugar, and dry yeast in each groove and mix with the flour next to it first, then mix it all together.
  2. Add water and knead to form a lump.
  3. Add olive oil and knead until smooth.
  4. Put hot water in another bowl, place the bowl with the dough on it, and cover it with wrap.
  5. *1 hour of primary fermentation
  6. After fermentation, press firmly to release the gas, then transfer to a chopping board and knead.
  7. After dividing into 4 rounds, cover with plastic wrap.
  8. *Intermediate fermentation 15 minutes
  9. Add tomato sauce, mushrooms, onions, olives, ham, etc., and boil to make the sauce and prepare the pizza cheese.
  10. Grease the muffin tin with olive oil and add the pizza dough.
  11. Put pizza cheese → tomato sauce → pizza cheese in the order, and sprinkle with parsley and basil.
  12. 10-15 minutes in a 200-degree oven
