Ingredients

Biscuit:

  • 50g Butter
  • 63g Sugar
  • 63g Cake flour

Pastry cream:

  • 3 Egg yolk
  • 40g Sugar
  • 25g Cake flour
  • 250ml Milk
  • 1/4ts Vanilla extract
  • 20g Melted chocolate
  • 10g Green tea powder + 15g milk

Choux:

  • 30ml Water
  • 30ml Milk
  • 27g Butter
  • 1g Salt
  • 36g Cake flour
  • 55g Egg
  • Sugar powder

Instructions

Biscuit:

  1. After softening the butter, add sugar and mix.
  2. Sift the soft flour and mix, then roll flat and harden in the refrigerator for 30 minutes.

Cream:

  1. Add sugar to egg yolk and mix, then add soft flour and mix.
  2. Put milk and vanilla extract in a pot and remove from heat when the edges boil.
  3. Add 1/2 of milk little by little to the egg yolk and mix, then put it back into the pot.
  4. Heat on low heat until thickened.
  5. Divide the cream into 3 parts and mix with melted chocolate in one, and green tea powder + milk in the other one and mix.

Choux:

  1. Put water+milk+butter+salt in a pot and boil it until the butter is completely dissolved, then remove from the heat.
  2. Sift the soft flour, mix, put on low heat, and heat with stirring until a film forms on the bottom.
  3. Add eggs, mix well, and place in a piping bag.
  4. Pan in an oven pan, dip the biscuit dough in a circle, and bake in an oven preheated to 190 degrees for 25 minutes.
  5. Cut the sugar in half, and then sand it with vanilla + chocolate + green tea cream.
  6. Sprinkle with powdered sugar.
