I made a chewy and light plain bagel~ It was difficult to knead by hand, but it is so delicious! haha If you eat it with cream cheese, it’s really cool bb! A slightly longer fermentation time will result in a more fluffy bagel, If the fermentation is short, a very chewy bagel is made.

Ingredients

  • 200g Bread Flour
  • 4 g dry yeast
  • 3g salt
  • Sugar 7g Sugar
  • 4g Butter
  • Water (35℃) 125g Water (35℃)
  • 1L Water
  • 1 tbsp baking soda
  • 1Ts Honey

Instructions

  1. Put strong flour in a bowl, make 3 grooves, and then
    Add salt, sugar, and dry yeast and mix with flour first, then mix thoroughly.
  2. Add water and knead until it forms a lump.
  3. Add butter and knead for 10-15 minutes until smooth.
  4. Lightly apply cooking oil to the surface, cover and ferment for 50-60 minutes.
  5. After fermentation, press the dough firmly to release gas and divide into 3 pieces.
  6. Using a rolling pin, open it in a wide rectangular shape, and roll it up from the end like a roll of gimbap.
    Pinch it tightly so that it does not fall off.
  7. Make one end pointed, and spread the other end thinly and wide, and attach it by rolling it so that the thin and wide part faces outward.
  8. Trim the attached part meticulously.
  9. Place on paper foil, cover and ferment for 20 minutes.
  10. Add baking soda and honey to water and boil.
  11. When the water boils, reduce the heat to low and blanch the molded dough for 30 seconds front and back.
  12. Pan in an oven pan and bake in an oven at 180 degrees for 20-22 minutes.
