I bought some cornmeal the other day and was wondering what to make with it, so I decided to make cookies.
The flavor of the corn is still there, so you can taste the savory corn flavor and it crumbles so crisp~.
I shaped it into an elongated lemon shape and slightly pressed it with a scraper to shape it.
It tastes like corn and the cracks are crispy, so I think it has a good texture.
I put sugar on the outside so the dough itself wasn’t too sweet.
It’s a savory and crispy cookie that I keep reaching for^^.

Ingredients
- 100g Unsalted butter
- 100g Sugar
- 1g Salt
- 1 Egg
- 3g Vanilla extract
- 80g Milk
- 150g Cake flour
- 5g Baking powder
- 150g Cornmeal
- Sugar
Instructions
- Mix the room-temperature butter with a hand whisk, add the sugar and salt, and mix (lightly).
- Beat in the egg and vanilla extract, then add the warm milk (about 40 degrees) and mix.
- Mix in the flour, baking powder, and cornmeal.
(I sifted the bicarbonate of soda and baking powder, but I think it's best to just add the cornmeal, as it makes a lot of flour when sifted) - Mix with a spatula and knead with your hands to form a ball.
- Divide into 30g portions, shape them, and place them on a sugar-dusted baking sheet to make a pattern on the top (you can also place them on the palm of your hand and make marks with a scraper).
- Bake in a 180-degree oven for about 20 minutes (adjust the time according to the color)
