Basque Burnt Cheesecake Recipe

In Cooking Tree, we’re serving up delicious Basque Burnt Cheesecake, and we’ll show you how to make it from scratch.

I made a Basque-style baked cheesecake with a nice dark roast color.

Basque cheesecake is a cheesecake eaten a lot in the Basque Country in Spain.

I tend to bake at a high temperature for a long time, but when I baked it and took it out, it was soft and it was interesting and fun~

After cooling it at room temperature, if you cool it in the refrigerator, it will sink naturally and the shape is wonderful~

I cooled it down in the refrigerator overnight~^^

I baked a Teflon sheet instead of parchment paper, but it was nice to be able to remove it neatly~

Since the dough is rather thin, it may leak a little when using a detachable mold, so I think it would be better to crumple the parchment paper as a whole and bake it.

The color on the top looks like it’s burnt, but when you eat it, it doesn’t taste burnt at all, and I think the roasted flavor enhances the flavor.

Ingredients

  • 450g Cream cheese
  • 120g Sugar
  • 3 Eggs
  • 3g Vanilla extract
  • 7g Corn starch
  • 220g Whipping cream

Instructions

  1. Soften the cream cheese, add sugar and mix, then add eggs and vanilla extract and mix.
  2. Add cornstarch and mix, add fresh cream, mix, pour in a Teflon sheet and bake in an oven preheated to 200 degrees for 45 to 50 minutes.
  3. After cooling at room temperature, cool in the refrigerator.
