I made a triple chocolate charlotte cake that melts in your mouth~
It is made with only chocolate and fresh cream without adding gelatin, so it is really soft.
Dark, milk, and white chocolates are used, so the color is beautiful and each chocolate has a different degree of hardness, so I think it’s better because the texture is different.
It tastes even better when a biscuit sheet is added to the soft mousse.

Triple Chocolate Charlotte Cake
Ingredients
- 2 Egg yolks
- 15g Sugar
- 6g Cocoa powder
- 2g Vanilla extract
- 2 Egg whites
- 40g Sugar
- 50g Cake flour
- 75g Whole wheat biscuits
- 5g Cocoa powder
- 35g Melted unsalted butter
- 100g Dark chocolate
- 70g Heavy cream
- 80g Whipped heavy cream
- 100g Milk chocolate
- 70g Heavy cream
- 80g Whipped heavy cream
- 100g White chocolate
- 70g Heavy cream
- 80g Whipped heavy cream
Instructions
- Add sugar and vanilla extract to egg yolk and mix, then add cocoa powder and mix.
- Divide the egg whites into sugar 2 times and make a hard meringue.
- Add 1/3 of the meringue to the egg mixture and mix, then add them all to the bowl containing the meringue and mix.
- Sift the flour through a sieve, mix it, put it in a piping bag, and knead the dough in an oven pan.
- Sprinkle with powdered sugar and bake in an oven at 190 degrees for 10 minutes. (Preheat 210 degrees)
- After cooling, cut it to fit the height, put it inside the mold, add cocoa powder to the whole wheat cookie flour and mix, then add melted butter and mix.
- Put it in a mold, press it to flatten it, and put it in the refrigerator.
- Put the cream in the dark chocolate and heat it in the microwave for about 40 seconds to melt it.
- Whip the fresh cream about 60%, add the melted dark chocolate, mix, pour into the mold and harden in the freezer for about 10 minutes.
- Put the cream in the milk chocolate and heat it in the microwave for about 40 seconds to melt it.
- Whip the whipped cream about 60%, add the melted milk chocolate, mix, pour into the mold, and harden in the freezer for 30 minutes.
- Add whipped cream to the white chocolate and heat in the microwave for about 40 seconds to melt.
- Whip the whipped cream about 60%, add the melted white chocolate, mix, pour into the mold, and harden in the freezer for 1 hour.
- Sprinkle chocolate on top to finish.
