Thick Blueberry Pancakes

Ingredients

  • 3 Eggs
  • 2g Salt
  • 70g Sugar
  • 20g Honey
  • 300g Cake flour
  • 8g Baking powder
  • 270g Milk
  • 30g Melted unsalted butter

  • Blueberry
  • a little flour
  • Nutella

Instructions

  1. Whisk the eggs with the salt, then add the sugar and honey.
  2. Sift the flour and baking powder into a bowl and add a little milk, mixing until there are no lumps.
  3. Add the remaining milk and melted butter and mix until evenly combined.
  4. Strain through a sieve, cover with plastic wrap, and let sit at room temperature for about 30 minutes.
    (You can skip the straining part)
  5. Dredge the blueberries in flour, then heat a pan over low heat and add oil to coat.
  6. Pour in the batter, top with the blueberries, and squeeze in the Nutella.
  7. Pour in some batter, cover, and bake over low heat until bubbly.
  8. Flip the batter over, cover and bake until done and remove.
  9. Dot with butter, top with blueberries, dust with powdered sugar, and drizzle with maple syrup.
