No-Bake Cherry Cheesecake Recipe

In Cooking Tree, we’re serving up delicious No Bake Cherry Cheesecake, and we’ll show you how to make it from scratch.

I made a simple no-oven cheesecake using cherry jam.
It is an easy and simple cheesecake made neatly without a sheet.

If you tightly wrap the underside of the mousse frame with cling film and harden it, it will not leak.
I added yogurt to add freshness, and it goes well with a layer of jelly made of cherry jam and oligo cherries on top.

If you eat the white layer alone, you can enjoy a clean taste, and if you eat it with fruits, you can feel a different taste.

I used cherries, but I think it can be made in a variety of ways by using other fruit jams to make a jelly layer and adding fruits~

If you want to use fruit juice instead of jam, you can use 3g of gelatin for 90g of juice.
Sugar content varies from juice to juice, so you can add sugar depending on the juice you are using.

No Bake Cherry Cheesecake

Ingredients

  • 150g Cream cheese
  • 30g Sugar
  • 40g Plain yogurt
  • 2g Vanilla extract
  • 3g Lemon juice
  • 3g Gelatin
  • 60g Whipped cream (whipped up 50%)
  • 60g Cherry jam
  • 40g Water
  • 3g Gelatin
  • Cherry

Instructions

  1. Soften the cream cheese, add sugar and mix, then add plain yogurt, vanilla extract, and lemon juice and mix.
  2. Soak in cold water for about 10 minutes, drain the water, microwave for about 10 seconds to completely dissolve, then add to the dough and mix.
  3. Add 50% thinly whipped cream, mix, pour into a 7cm mold, flatten, and harden in the freezer for 20 minutes.
  4. Add water to cherry jam and mix, then add melted gelatin and mix.
  5. Pour cherry jelly over the cheesecake and harden in the refrigerator for 2 hours.
  6. Wrap the outer surface with a steam towel to melt it slightly, take out the mold, smooth the sides, and finish by placing the cherry on top.
