Since milk jam is sandwiched on the cake, it is necessary to sprinkle enough sugar syrup on the sheet to make it moist. When I pour green tea glaze and coat it, it sparkles and seems to add a sense of luxury *^^*

Green tea Torte Cake (Matcha Glaze Cake)


Green tea Milk jam

  • 15g Green tea powder
  • 120g Sugar
  • 70g Condensed milk
  • 250ml Whipping cream
  • 500ml Milk

Green tea sponge cake sheet

  • 5 Egg white
  • 100g Sugar
  • 5 Egg yolk
  • 2g Vanilla extract
  • 130g Cake flour
  • 10g Green tea powder
  • 4g Baking Powder
  • 60g Milk
  • 50g Melted butter

Green tea glaze

  • 35g Water
  • 150g Whipping cream
  • 20g Sugar
  • 100g White chocolate
  • 5g Green tea powder
  • 4g Leaf gelatine
  • Green food coloring
  • Sugar syrup


Green Tea Milk Jam

  1. Put green tea powder and 100g of fresh cream in a pot and mix.
  2. Add 150g of remaining fresh cream and mix, then add sugar and condensed milk and mix.
  3. Add milk, mix, and boil over medium heat while stirring.
  4. Boil until thickened with stirring for 40-50 minutes, put in a bottle, cool, and store in the refrigerator.

Green Tea Sponge Cake Sheet

  1. If a large bubble appears while whipping the egg white, divide the sugar into 2-3 batches and whip it to make a meringue.
  2. Divide the egg yolk into 2 parts and mix, then add vanilla extract and mix.
  3. Sift the soft flour, green tea powder, and baking powder into 2 portions and mix.
  4. Add a little dough to the melted butter and milk and mix, then add to the main dough and mix.
  5. Pour into an oven pan and hit the bottom 2-3 times to remove air bubbles.
  6. Bake in an oven preheated to 180 degrees for 35-40 minutes, then cool.
  7. Cut the cake sheet into 4 pieces, place one sheet on a rotating plate, sprinkle with sugar syrup, apply milk jam, and put another sheet on top. Repeat 2 more times.
  8. Spread a thin layer of milk jam on the top and sides of the cake, flatten it, and put it in the refrigerator.

Green tea glaze

  1. Put water, whipped cream, and sugar in a pot and heat it. When it boils, take it off the heat.
  2. Add white chocolate and mix, then add green tea powder and mix.
  3. Add gelatin soaked in cold water for 15 minutes, mix, add a little green food coloring, mix, and sieve through a sieve.
  4. Set the temperature of the glaze to 30 degrees, pour it all over the cake, harden it slightly, and pour one more time to coat it.
