I made a refreshing mousse cake with red grapefruit! Use a mold with a center groove to harden the mousse, and add grapefruit puree and grapefruit pulp into the center groove to make it sweeter~
I think it would be good to use castella or Daize cookies instead of the sponge sheet.
Grapefruit is a juicy fruit, so it takes a little longer to make the puree, and it becomes less thick than other fruit purees~^^

Ingredients
Grapefruit puree
- 200g Grapefruit
- 70g Sugar
- 5ml Lemon juice
Mousse
- 35g Cream cheese
- 30g Sugar
- 50g Plain Yogurt
- 1ts Vanilla extract
- 100g Grapefruit puree
- 5g Leaf gelatine
- 50g Fresh cream
Glaze
- 50g Grapefruit puree
- 25g Sugar
- 50g Corn syrup
- 4g Leaf gelatine
- 35g Fresh cream
- Food coloring (red)
- 50g Melted white chocolate
- Sponge cake sheet (7cm)
Instructions
Puree:
- Grind the grapefruit flesh with the inner skin removed in a blender and boil it with sugar in a pot. When it thickens, add lemon juice and boil a little more. Remove from heat and cool.
Mousse:
- Put cream cheese, sugar, plain yogurt, and vanilla extract in a bowl and mix, then add grapefruit puree and mix.
- Add melted gelatin and mix, then add whipped cream and mix.
- Put it in a mold and harden it in the refrigerator for 2-3 hours.
Glaze:
- Put grapefruit puree, sugar, and oligosaccharide in a pot and boil until sugar dissolves, then remove from heat.
- After sieving, add soaked gelatin and mix.
- Add fresh cream and mix, then add food coloring to make it pink.
- Remove the mousse from the mold, coat with glaze, and harden in the refrigerator for 10 minutes.
- Decorate with grapefruit puree, grapefruit pulp, and apple mint in the center groove.
