I made a cotton cheesecake that melts in your mouth with one bite! It’s a cake made with meringue, so it’s really soft and moist~ I made it 3 times in the last week alone.

If you eat one piece, the texture is good, the taste is good, and you feel good. It’s not a creamy cheesecake, it’s light and light, so even those who don’t like cheesecake will be able to enjoy it somehow~^^

Baking at a low temperature may cause the color of the top to appear pale depending on the oven. In that case, bake it at about 160 degrees for 2-3 minutes while looking at the color.

Cotton Cheesecake

Ingredients

  • 125g Cream cheese
  • 30g Butter
  • 35g Sugar
  • 50g Milk
  • 3 Egg yolk
  • 1/2ts Vanilla extract
  • 2ts Lemon juice
  • 1/8ts Salt
  • 30g Cake flour
  • 10g Corn starch
  • Meringue (3 egg white + 35g sugar)

Instructions

  1. Place a bowl on top of a pot of hot water, add cream cheese, butter, and sugar and stir to dissolve it completely.
  2. Remove the bowl from the pot, add milk and mix, then add egg yolks one at a time and mix.
  3. Add vanilla extract, lemon juice and salt and mix, then sift the soft flour and cornstarch and mix.
  4. Divide the meringue into 3 batches and mix.
  5. Put the dough in the pan and tap the bottom 2-3 times to remove air bubbles.
    Put it on another oven pan, pour hot water, and bake in an oven preheated to 140 degrees for 80 minutes.
