Coffee Almond Cookies Recipe

I made a mocha Margaret with a soft texture with a subtle coffee scent.
Almond powder and peanut butter are added to the flavor, and the minced peanuts are chewy in the middle, so the texture is good.

Ingredients

  • 100g Unsalted butter
  • 30g Peanut butter
  • 80g Sugar
  • 1g Salt
  • 1 Egg
  • 2g Vanilla extract
  • 10g Hot milk
  • 3g Coffee powder
  • 4g Cocoa powder
  • 160g All-purpose flour
  • 80g Almond powder
  • 2g Baking powder
  • 15g Chopped peanuts

Instructions

  1. Soften unsalted butter that has softened at room temperature, add peanut butter and mix, then add sugar and salt and mix.
  2. Prepare by mixing coffee powder and cocoa powder in hot milk. Add a non-cold egg and vanilla extract to the dough and mix, then add the coffee mixture and mix.
  3. Sift wheat flour, almond powder, and baking powder in 2 batches, mix lightly, add minced peanuts, mix, cover with cling wrap, and place in the refrigerator for 1 hour.
  4. Divide the dough into about 20g, shape it into a circle, use a scraper to make a pattern, and place it on the oven pan.
  5. Bake in an oven at 180 degrees (200 degrees preheat) for 10 to 12 minutes.
