– 175g Mascarpone Cheese – 35g Sugar – 1/2ts Vanilla extract – 4g Leaf gelatine – 140g Whipped cream – 30ml Espresso – 10ml Water – 10g Sugar – Chocolate sponge cake sheet One 15cm, one 12cm – 150g whipped cream (+2g instant coffee and 1/2ts water mixed, 15g sugar) – Cocoa powder

INGREDIENTS

1. Put the mascarpone cheese in a bowl and loosen it gently, then add sugar and vanilla extract and mix. 2. Add melted gelatin and mix, then add whipped cream and mix. 3. Make coffee syrup by mixing espresso, water and sugar. 4. Lay a 15cm cake sheet on the mold and coat it with plenty of coffee syrup. 5. Add half the cream and flatten it. 6. Put a 12cm cake sheet, coat it with coffee syrup, and then add cream and flatten it. 7. Harden in the refrigerator for 3 hours. 8. Decorate with coffee whipped cream and cocoa powder.
