Melon mousse cake

– Melon – 45g Egg yolk – 35g Sugar – 2g Vanilla extract – 185g Hot milk – 10g Leaf gelatine – 225g Grated melon – 185g Whipped cream – 12cm sponge cake sheet – Green food coloring – Apple mint


1. Cut the melon and dig it into a round shape. 2. 225g white melon goes to blender. 3. Put egg yolk in a bowl and loosen. Add sugar and vanilla extract and mix, then add hot milk and mix.

4. Put it in a pot and heat it until it thickens slightly. 5. Add gelatin, mix, and transfer to another bowl to cool.

6. Add ground melon and mix, then add whipped cream, mix, and grind finely in a blender. 7. Put the sponge cake sheet in the wrapper, pour the mousse slightly over the sheet and let it harden in the refrigerator for 1 hour.

8. Put the cubed melon in the center, pour the mousse and harden in the refrigerator for 2 hours. 9. Add a little green food coloring to the remaining mousse and mix.

10. Pour over the mousse and harden in the refrigerator for 4 to 5 hours. 11. Garnish with round melon and apple mint.
