Grapefruit mousse cake is on the menu in Cooking Tree, and we are going to teach you how to make this delicious recipe from scratch!
Grapefruit puree – 200g Grapefruit – 70g Sugar – 5ml Lemon juice
Mousse – 35g Cream cheese – 30g Sugar – 50g Plain Yogurt – 1ts Vanilla extract – 100g Grapefruit puree – 5g Leaf gelatine – 50g Fresh cream
Glaze – 50g Grapefruit puree – 25g Sugar – 50g Corn syrup – 4g Leaf gelatine – 35g Fresh cream – Food coloring (red) – 50g Melted white chocolate – Sponge cake sheet (7cm)
Puree Grind the grapefruit flesh with the inner skin removed in a blender and boil it with sugar in a pot. When it thickens, add lemon juice and boil a little more. Remove from heat and cool.
Mousse 1. Put cream cheese, sugar, plain yogurt, and vanilla extract in a bowl and mix, then add grapefruit puree and mix. 2. Add melted gelatin and mix, then add whipped cream and mix. 3. Put it in a mold and harden it in the refrigerator for 2-3 hours.
Glaze 1. Put grapefruit puree, sugar, and oligosaccharide in a pot and boil until sugar dissolves, then remove from heat. 2. After sieving, add soaked gelatin and mix. 7. Add fresh cream and mix, then add food coloring to make pink. 3. Remove the mousse from the mold, coat with glaze, and harden in the refrigerator for 10 minutes. 4. Decorate with grapefruit puree, grapefruit pulp and apple mint in the center groove.
