Verdens Beste (Norwegian cake) Recipe

I made a classic Norwegian cake with Diplomat cream sandwiched on a cake sheet topped with meringue and almonds! In Norway, this cake is called World’s Best Cake.

The meringue and almonds are placed on the sheet and baked, the meringue in the middle are moist and chewy, and the top is crispy and savory.

Diplomat cream mixed with fresh cream and custard cream is a fantastic combination with this cake, so I think the taste is doubled~~

Verdens beste (Norwegian cake)

Ingredients

Cake sheet

  • 95g Butter
  • 50g Sugar
  • 3 Egg yolk
  • 96g Plain flour
  • 3g Baking powder
  • 48g Milk

Meringue

  • 3 Egg white
  • 100g Sugar

Diplomat cream

  • 80g Custard Cream
  • Whipped cream (80g whipping cream + 8g sugar)
  • Sliced almond
  • Sugar powder

Instructions

  1. Put butter in a bowl, loosen gently, add sugar and mix, then add egg yolk and mix.
  2. Sift the wheat flour and baking powder and mix.
  3. Add milk and mix, then pan flat in an oven pan.
  4. Whip the egg whites in a bowl and when large bubbles appear, divide the sugar into 3 portions and whip to make a meringue.
  5. Place the meringue on the cake batter, sprinkle with almond slices, and bake in an oven preheated to 180 degrees for 25 to 30 minutes.
  6. Place the baked cake on a cooling rack to cool.
  7. Mix the custard cream and whipped cream to make the Diplomat Cream.
  8. Trim the edges of the cooled cake and cut it in half.
  9. Put 1 sheet on a cutting board and apply cream.
  10. Put another sheet on top and sprinkle with powdered sugar.
