I made a castella cake decorated with pink strawberry cream and fresh strawberries on top of the soft castella! It’s cute as if you’re wearing a pretty frill skirt when you decorate it with pink fresh cream twice haha The fluffy castella and the strawberry whipped cream stuffed inside go well together and it’s really delicious~^^

Ingredients
- 60g Plain flour
- 3 Egg white
- 60g Sugar
- 3 Egg yolk
- 15g Grape seed oil
- 30g Honey
- 12g Milk
- 8g Vanilla extract
- 150g Whipped cream (+15g sugar)
- Strawberry
- 100g whipped cream (+10g sugar)
- 2Ts(30ml) Strawberry Puree
- Strawberry
- blueberry
- Sugar powder
Instructions
- Sift the gravitational flour.
- Whip the egg whites in a bowl, and when large bubbles appear, divide the sugar into 3 portions and whip to make a meringue.
- Add egg yolks one at a time and mix.
- Divide the sifted wheat flour into 3 portions and mix.
- Divide the mixture of grapeseed oil, honey, and milk in 2 batches and mix.
- Add vanilla extract and mix.
- Pour the batter into the pan, stir 2-3 times with chopsticks to clear air bubbles, and bake in an oven preheated to 170 degrees for 35-40 minutes.
- Add the sliced strawberries to the whipped cream, mix, and place in a piping bag.
- Make a hole in the top of the castella and put strawberry whipped cream.
- Add strawberry puree to the thinly whipped cream, mix, and pour over the cake.
- Decorate with strawberries, blueberries and powdered sugar.
