Soft Lemon Cookies Recipe

I made a lemon cookie with a light and soft texture~
It’s not a regular hard cookie, but a soft cookie, so it’s good to eat softly.

Lemon zest and lemon juice are added, and the sugar powder is really fragrant and naturally cracked on the outside.

Before baking cookies, you need to coat them with powdered sugar and bake them to get a more beautiful shape.
It’s a cookie that you can’t get tired of eating because of the lemon flavor.

I baked it a little big, but I think it would be cute even if it was baked small~

Soft Lemon Cookies

Ingredients

  • 50g Unsalted butter
  • 80g Sugar
  • 1 Egg
  • 2g Vanilla extract
  • Lemon zest
  • 15g Lemon juice
  • 150g Cake flour
  • 2g Baking powder
  • 2g Baking soda

Instructions

  1. Soften unsalted butter, add sugar and mix, then add eggs and vanilla extract and mix.
  2. Add lemon zest and lemon juice, mix, sieve soft flour, baking powder, and baking soda, mix, cover and rest in the refrigerator for 1 hour.
  3. Make a round dough, coat it with sugar, sprinkle with sugar powder, and then pan in an oven pan and bake in an oven preheated to 170 degrees for 10 to 11 minutes.
