I made chocolate and vanilla cookies with cream sandwiches~
Chocolate cookies with Nutella and vanilla cookies with peanut butter make it even more delicious~

I added a bit of lemon juice to the buttercream, and although the lemon flavor isn’t strong, it’s nice to hold the greasy feeling.

It’s buttercream, so if you put it in the refrigerator, it hardens well, so it tastes better if you eat it cold like a macaron~

Cookies have a crunchy and chewy texture, so you can eat them just by eating them.

Sandwich Cookies Filled Nutella & Peanut butter

Ingredients

  • 50g Unsalted butter
  • 30g Sugar
  • 30g Brown sugar
  • 1g Salt
  • 15g Starch syrup
  • 15g Egg
  • 2g Vanilla extract
  • Vanilla (100g Cake flour) / Chocolate (80g Cake flour, 10g Cocoa powder)
  • 15g Almond powder
  • 2g Baking powder
  • 2g Baking soda
  • 120g Unsalted butter
  • 60g Powdered sugar
  • 30g Heavy cream
  • 3g Vanilla extract
  • 5g Lemon juice
  • Peanut butter
  • Nutella

Instructions

  1. Soften unsalted butter, add white sugar, brown sugar, and salt, mix, then add starch syrup, egg, and vanilla extract and mix.
  2. Sift in soft flour, almond powder, baking powder, and baking soda, mix, wrap in plastic wrap and rest in the refrigerator for 1 hour.
  3. Make the chocolate dough in the same way.
  4. Divide the dough into about 15g, shape it into a circle, place it on the oven pan, press it lightly, and bake in an oven preheated to 170 degrees for 12 minutes.
  5. Soften unsalted butter, add sugar powder and whip it for about 5 minutes, then add fresh cream, vanilla extract, and lemon juice and mix.
  6. Squeeze the cream on the cookies, put Nutella or peanut butter in the center, and cover with another cookie.
