Ingredients

Tart sheet

  • 80g Plain flour
  • 15g Sugar powder
  • 5g Almond powder
  • a pinch of Salt
  • 45g Cold Butter
  • 1 Egg yolk
  • 1 Green Apple
  • 10g Sugar
  • 50g Water
  • 15g Lemon juice
  • Custard cream
  • Corn syrup

Instructions

  1. Put wheat flour, sugar powder, almond powder and salt in a bowl and mix, then add butter and mix by hand until crumbly.
  2. Add the egg yolks and mix until they come together, and then rest in the refrigerator for 30 minutes.
  3. Roll out the dough and cut it out with a cutter, put it in a muffin tin, make a hole in the bottom with a fork, and bake in an oven preheated to 180 degrees for 18-20 minutes.
  4. Slice 1 apple thinly.
  5. Put the sliced apples, lemon juice, and water in a bowl and microwave for 2 minutes.
  6. Remove the water by placing it on a kitchen towel.
  7. Fill the cooled tart sheet with custard cream.
  8. Layer the apples one by one to make them long and roll them in one direction.
  9. Carefully cut off the bottom, roll 2 apples thinly, place them in the center, and place them on top of the custard cream.
  10. Apply oligosaccharide.
