I made a red velvet cupcake with plenty of creams on top of a thick and moist cake~
It is not a fluffy cake, but rather a moist and heavy cake, so it goes well with cream cheese cream.

Due to the nature of the red velvet cake, it is necessary to add a lot of food coloring for the color to come out strongly.

It’s a cream made by mixing butter and cream cheese, so I think it’s good to give it a shape.
If the cream is too soft, you can harden it in the refrigerator and use it to make a more beautiful shape.

I sprinkled a little bit of crystal sugar on top of the cream, and when I eat the cake, it has a good chewy texture~

Red Velvet Cupcake

Ingredients

  • 115g Warm milk
  • 5g Lemon juice
  • 50g Unsalted butter
  • 80g Sugar
  • 1g Salt
  • 1 Egg
  • 3g Vanilla extract
  • 135g Cake flour
  • 5g Cocoa powder
  • Red food coloring
  • 5g Lemon juice
  • 3g Baking soda
  • 65g Unsalted butter
  • 55g Powdered sugar
  • 135g Cream cheese

Instructions

  1. Add lemon juice to warm milk and mix.
  2. Soften unsalted butter, add sugar and salt, mix, add eggs, mix, add vanilla extract, and mix.
  3. Sift the soft flour and cocoa powder, add the milk mixture, mix, add red food coloring, and mix to color.
  4. Add baking soda to lemon juice and mix, then add to the dough and mix.
  5. Put about 50% of the dough in the muffin mold, bake in an oven preheated to 160 degrees for 20 minutes and cool.
  6. Soften unsalted butter, add sugar powder, and whip enough for about 5 minutes until it becomes rich, then add cream cheese and mix to make cream.
  7. Finish with cream on top of the cooled cake.
