Pineapple Coconut Pie Recipe

I made a pineapple coconut pie that resembles a pineapple!
When I put a big pineapple in it, the chewing texture is good and the visual looks more appetizing~

I made a pattern with a pie sheet and made the remaining dough, colored it green, and baked it in the shape of a leaf to decorate it, but I think it has a more pineapple feel~

Pineapple Coconut Pie

Ingredients

  • 120g Cake flour
  • 80g Cold unsalted butter
  • 27g Coldwater
  • 3g Sugar 
  • 1g Salt

  • 240g Pineapple
  • 25g Sugar
  • 5g Lemon juice

  • 60g Unsalted butter
  • 35g Powdered sugar
  • 1 Egg
  • 3g Vanilla extract
  • 40g Almond powder
  • 30g Coconut powder
  • 10g Cake flour

Instructions

  1. Add cold unsalted butter to the soft flour, and mix the butter with the flour with a scraper until it becomes a small size. Add sugar and salt to the cold water and mix, then add it to the dough and mix.
  2. When the dough is lumped together, wrap it in cling film and let it rest in the refrigerator for 1 hour.
  3. Cut the pineapple into small pieces, put it in a pot with sugar, and boil it. When the pineapple becomes transparent, add lemon juice and finish, transfer to another bowl, and cool.
  4. Soften unsalted butter, add sugar powder, mix, add egg and vanilla extract, mix, add almond powder, coconut powder, and sift flour and mix.
  5. Push the rested dough to the size of the mold, put it in the mold, shape it, and use a fork to make a hole in the bottom.
  6. Fill with coconut almond cream and place the cooled pineapple flat.
  7. Knead the remaining pie dough, spread it out, cut it long, put it crosswise on top of the pineapple, shape it, and apply a mixture of egg yolk and milk.
  8. Bake at 180 degrees (preheated for 20 minutes at 190 degrees) for 40 minutes and cool.
