I made a lovely pastel rainbow macaron~
I think itโ€™s neat and cute because the cream of various colors goes well with the clean white coke.
The cream was made easily using yogurt powder.
I baked the coke at a low temperature to make it white, so the piercing didnโ€™t come out much, but I think the color is pretty because it doesnโ€™t burn much.
I decorated the coke on the top with white chocolate to make it look a little more stylish.
If you eat it cold, the yogurt tastes fresher and you can feel the chewy texture.

Pastel Rainbow Yogurt Macarons

Ingredients

  • 90g Almond powder
  • 80g Powdered sugar
  • 70g Egg white
  • 70g Sugar

  • 120g Milk
  • 100g Yogurt powder (sweetened)
  • 10g Corn starch
  • 200g Unsalted butter

  • Melted white chocolate

Food coloring

  • white
  • blue
  • red
  • yellow

Instructions

  1. Mix almond powder and sugar powder and sieve twice to prepare.
  2. When large bubbles appear while whipping the cold egg whites, divide the sugar into 3 batches and whip to make a meringue. Add white food coloring and clear the bubbles at low speed for about 2 minutes.
  3. Divide the powder into 2 batches, mix, and when it flows heavily, put it in a piping bag.
  4. Pan in an oven pan, flatten and dry at room temperature for 1 hour.
  5. Put milk, yogurt powder, and cornstarch in a pot and mix, stir over low heat and boil until thickened, then transfer to another bowl and cool.
  6. When drying is complete, bake in an oven preheated to 135 degrees for 17 minutes, then cool and sprinkle with melted white chocolate on the top.
  7. Soften unsalted butter, add cooled yogurt mixture, whip it to make the cream, divide into 4 parts, and add food coloring to 3 places to color.
  8. Mix the colors in the wrap, squeeze the cream long, roll it up, put it in a piping bag, and sand it on the coke, and then harden it in the refrigerator.

I just love these macarons! So beautiful! I'd like to try them, but I~can't find yogurt powder. Can I substitute with milk powder? Thanks!

Thank you for your comment! I'm glad you love the macarons. Regarding the substitution for yogurt powder, you can try using milk powder as a substitute. While it may not provide the exact same flavor profile as yogurt powder, it can still work as a replacement in this recipe. Just keep in mind that the taste and texture of the macarons may be slightly different. Enjoy your macarons!
