Orange Castella Cupcakes

Ingredients

  • 60g Cake flour
  • 2g Baking powder
  • 75g Egg
  • 50g Sugar
  • 7g Honey
  • 17g Melted butter
  • 17g Milk
  • 10g Orange Peel
  • Orange Peel + Honey
  • Orange, Rosemary

Instructions

  1. Sift the soft flour and baking powder to prepare.
  2. Mix eggs, sugar, and honey in a bowl, place in a pot of hot water at 60-70 degrees, and boil until the temperature reaches 35 degrees.
  3. Whip until rich ivory-colored foam is formed, then divide (1) into 3 portions and mix.
  4. Put a part of the dough in a bowl of melted butter and milk, mix, add to the main dough and mix, then add orange peel and mix.
  5. After panning about 70% in a muffin tin, bake in an oven preheated to 170 degrees for 20 minutes.
  6. Apply the orange peel and honey mixture on the top of the cake and top with sliced oranges and rosemary.
