Ingredients
- Meringue (65g egg white + 20g sugar + 1/4ts vanilla extract)
- 52g Almond Powder
- 35g Sugar powder
- 12g Cake flour
- 50g Sugar
- 10g Water
- 67g warm Fresh cream
- 40g Nut Mix
- Sugar powder
- 70g whipped cream (+7g sugar)
Instructions
- Sift almond powder, sugar powder and soft flour into meringue and mix.
- Pan in a circle in an oven pan, sprinkle with sugar powder twice, and bake in an oven preheated to 180 degrees for 12 minutes.
- When coming out of the oven, press the top surface to make it flat.
- Put sugar and water in a pot and boil it without stirring until it turns brown. Then add warm whipped cream little by little, mix, and heat until thickened.
- Add the nut mix and mix, then remove from the heat and cool slightly.
- Squeeze the whipped cream on the cooled dacquoise, put the other dacquoise on top and top with caramel nuts.
