No-Bake Two-Tier Strawberry Cheesecake Recipe

I made a no oven cheesecake with two layers around strawberries ~
I cut the strawberry in half and put it on the side.

I filled the whole strawberry in the middle, but even if I cut it, I can see the strawberries.
I made strawberry puree and poured it thinly on the top to harden it.

It was really delicious with lots of strawberries

This looks so amazing, it is exactly what I need for my kid's birthday. Will the cake keep if made a day in advance? Should I stack it right away or just before serving? Thank you!

Thank you for your comment! I'm glad you find the recipe amazing and suitable for your kid's birthday. In terms of making the cake in advance, it is definitely possible to prepare it a day ahead. To ensure the cake stays fresh, you can follow these steps: 1. Prepare the cake as instructed in the recipe, using the Lotus cookies and melted unsalted butter for the crust, and the cream cheese, sugar, vanilla extract, lemon juice, gelatin, and whipped cream for the filling. 2. Once the cake is assembled, refrigerate it for at least 4 hours or overnight. This chilling time allows the flavors to meld together and helps the cake set properly. 3. As for stacking, it's generally recommended to stack the cake just before serving. This will help prevent any potential shifting or sliding of the layers during transportation or storage. Keep the individual components separate until you are ready to serve the cake. Now, regarding the strawberry topping, you can prepare it a day in advance as well. Here's what you can do: 1. Combine the strawberries, sugar, and a few drops of red food coloring in a saucepan. Cook the mixture over low heat until the strawberries release their juices and the sugar dissolves. Let it simmer for a few minutes until the mixture thickens slightly. 2. Once the strawberry topping has cooled down, you can store it in an airtight container in the refrigerator. It should keep well for a day. Right before serving, you can decorate the top of the cake with the strawberry topping and any other desired decorations. This will ensure a fresh and visually appealing cake for your kid's birthday celebration! I hope your kid has a wonderful birthday, and I'm sure they'll enjoy the cake. If you have any more questions, feel free to ask. Happy baking!
