No-Bake Strawberry Cheesecake Recipe

Strawberry Cheesecake is on the menu in Cooking Tree, and we are going to teach you how to make this delicious recipe from scratch!

I made a no-oven cheesecake with red and pretty strawberries~
I think the blueberry layer that goes well with the strawberry makes it more delicious and the color is pretty.

I used blueberry and strawberry puree to make it not too sweet in the ratio of fruit 5 : sugar 1.
Although it has a simple shape, you can fully taste the taste of the fruit, making it a delicious dessert to eat at any time.

When attaching strawberries, cut them at the same height to make them more beautiful.

No-Bake Strawberry Cheesecake

Ingredients

  • 80g Digestive cookies
  • 35g Melted unsalted butter

  • 180g Cream cheese
  • 25g Sugar
  • 45g Plain yogurt
  • 2g Vanilla extract
  • 5g Gelatin
  • 90g Whipped heavy cream (whipped up 50%)
  • 20g Blueberry puree
  • 50g Strawberry puree

  • 200g Cream cheese
  • 40g Sugar
  • 50g Plain yogurt
  • 2g Vanilla extract
  • 3g Lemon juice
  • 4g Gelatin
  • 100g Whipped heavy cream (whipped up 50%)
  • Strawberry

  • 100g Strawberry puree
  • 50g Heavy cream
  • 3g Gelatin

Instructions

  1. Add melted unsalted butter to the crushed Daije cookies, mix, put in a 15cm mold, press firmly, and place in the refrigerator.
  2. Soften the cream cheese that has softened at room temperature, add sugar and mix, then add plain yogurt and vanilla extract and mix.
  3. Soak in cold water for about 10 minutes, squeeze out the water, heat in the microwave for 10 to 15 seconds, add melted gelatin, mix, add 50% thinly whipped cream, and mix.
  4. Transfer 150g of dough to another bowl, add strawberry puree, mix, place in a 12cm mold, flatten, and harden in the freezer for 1 hour.
  5. Add blueberry puree to the remaining cheesecake batter, mix, pour into a 15cm mold, flatten, and harden in the refrigerator.
  6. Make the white cheesecake dough in the same way as the cheesecake dough you made earlier.
  7. Attach the thinly sliced โ€‹โ€‹strawberries to the inner wall of the 15cm mold and place the hardened strawberry cheesecake in the 12cm mold in the center of the 15cm mold.
  8. Put the white cheesecake dough into the mold, flatten it, and let it harden in the refrigerator for about 30 minutes.
  9. Add fresh cream to strawberry puree, mix, add melted gelatin, mix, pour into a 15cm mold, flatten, and harden in the refrigerator for 2 hours.
