No-Bake Peach Cheesecake Recipe

I made a no-oven cheesecake topped with fragrant peaches~

When raw peaches are hardened on the upper layer with a peach drink, the color is beautiful and the taste is good~^^

The original peach drink is transparent, but when I mix it with peaches and harden it, the color automatically turns pink, so I think it’s prettier~

The taste goes well with cheesecake with cream cheese and yogurt, and you can feel the sourness, sweetness and fragrantness together.

The Daize cookie I used as a sheet had a slightly bland taste, so I added a little brown sugar, and it tastes much better and sweeter~^^

The weather was hot, so it was really hot when I used the oven.
So I made it in a no-oven, and I think it’s good because it’s simple~^^

I use hard peaches to keep the chewy texture alive, but I thought it would be delicious because it was soft and moist even if I made it with soft peaches.

No-Bake Peach cheesecake

Ingredients

  • 60g Crushed Digestive cookie
  • 10g Brown sugar
  • 25g Melted unsalted butter
  • 170g Cream cheese
  • 35g Powdered sugar
  • 45g Plain Yogurt
  • 2g Vanilla extract
  • 3g Gelatin sheet (or Powdered gelatin)
  • 70g Whipped cream (whipped 50%)
  • 200g Peach flavored drink
  • 6g Gelatin sheet (or 5g Powdered gelatin)
  • Peach

Instructions

  1. Mix the crushed dairy cookies, brown sugar, and melted unsalted butter, press firmly on the bottom of the mold, and place in the refrigerator.
  2. Soften the cream cheese, add sugar powder, plain yogurt, and vanilla extract, and mix.
  3. Soak in cold water for about 10 minutes, squeeze out the water, and heat in the microwave for about 10 seconds to melt it, then put it in the cheese batter and mix, then add 50% whipped cream and mix.
  4. Pour into the mold and harden in the refrigerator for 1 hour.
  5. Heat the peach-flavored beverage in the microwave for about 30 seconds, then add the soaked gelatin and mix.
  6. Cut peaches into small pieces, put them in (5), mix, pour over the hardened cheesecake, and harden in the refrigerator for 2 hours.
