Orange Flower Jelly Cheesecake
Ingredients
- 2 Oranges
- 9g powdered gelatin
- 45g Cold water
- 100g Hot water
- 30g Sugar
- 5g Lemon juice
- 50g Whole wheat biscuit
- 22g Melted unsalted butter
- 4g powdered gelatin
- 20g Cold water
- 100g Cream cheese
- 20g Sugar
- 10g Orange juice
- Orange zest
- 60g Heavy cream
Instructions
- Put cold water in the powder gelatin, soak it for 15 minutes and then add it to hot water and dissolve it completely.
- Remove the shell of the orange, cut it in half, and slice it thinly.
- Roll the orange, make a flower, put it in a cut paper cup, pour gelatin water and harden it in the fridge for 30 minutes.
- Remove the paper cup, put it upside down in the hemisphere mold, pour the gelatin water, cover the top with a wrap, and press it flat to harden it in the refrigerator for about 2 hours.
- Put the melted butter in the whole wheat cookie, mix well, add it to the mousse ring, flatten it, and harden it in the fridge.
- Add sugar to cream cheese and mix it, add orange juice and orange jest.
- Turn the called gelatin in the microwave for about 10 seconds, add it, and mix well.
- Whip it about 50% of fresh cream, mix evenly, pour it into the mousse, and harden it in the freezer for 30 minutes.
- Remove the frame using Steam towels, take the jelly out of the hemisphere mold, put it on the cheesecake, and apply coconut powder on the edge.
