Lotus Pound Cake Recipe

I made a pound cake with rotus.
I put it vertically, but when I cut it, it came out in an interesting shape.
The pound cake is made with all room temperature ingredients.

It’s important to add the eggs in small portions and whip them thoroughly.
I baked mine and let them cool and then cut them right away, but after they cooled I wrapped them in plastic wrap.
If you let it sit at room temperature overnight, the flavor will improve and it will become more moist.

Lotus Pound Cake

Ingredients

  • 90g Unsalted butter
  • 80g Sugar
  • 80g Egg
  • 90g Cake flour
  • 2g Baking powder
  • 30g Whipping cream
  • 3g Vanilla extract

  • Lotus
  • Lotus biscoff spread

Instructions

  1. Lightly whip the room-temperature butter, add the sugar, and whip well.
  2. Add the eggs in small portions and beat until well combined.
  3. Beat in the vanilla extract and sift in the baking powder.
  4. Beat on low speed with an electric mixer, then fold in the whipped cream.
  5. Pour into the mold, flatten, and add the rotus.
  6. Bake in a 175-degree oven for about 40 minutes and remove immediately to cool.
  7. Drizzle lotus biscoff over the top and sprinkle with lotus.

- Mold size : 15.5cm x 7.8cm x 6.5cm
