I made tiramisu the way it was made at home in Italy.
This tiramisu is made by mixing egg whites with egg whites without adding whipped cream and mixing them with cheese.

So, because the freshness of the eggs is very important, you must use fresh eggs.
When separating eggs from whites and yolks, I think it is better to use an egg separator rather than using the shell to separate them.

I made it with freshly baked lady finger cookies and strong coffee, so it has a richer taste and feels softer~
Because the cream contains only eggs, sugar and mascarpone cheese, it is delicious with less greasy feeling and savory and light.

Even if I didn’t add vanilla extract, I used fresh eggs, so there was no fishy smell.
If you are sensitive to fishy smell, you can add about 3g of vanilla extract.

For Italian tiramisu, the usual method is to put a cookie on the bottom and cream, then place another cookie and top with cream.

It tastes even better if you put it in a container and let it mature overnight in the refrigerator.

I did not use gelatin separately. If you want a firmer feel, you can add a little gelatin to make it.

Ingredients

  • 2 Egg yolks
  • 15g Sugar
  • 2g Vanilla extract
  • 2 Egg whites
  • 45g Sugar
  • 60g Cake flour
  • 3g Corn starch
  • 1/8ts Baking Powder
  • 50g Coffee
  • 70g Water
  • 20g Sugar
  • 2 Egg yolks (use fresh egg)
  • 60g Sugar
  • 250g Mascarpone cheese
  • 2 Egg whites (use fresh egg)
  • Cocoa powder

Instructions

  1. Add sugar and vanilla extract to egg yolk and mix until sugar dissolves.
  2. While whipping the egg white, when a large bubble appears, divide the sugar in 2 portions and whip it to make a meringue with soft horns.
  3. Divide the meringue into the yolk mixture and mix. Sift the soft flour, corn starch, and baking powder and mix.
  4. Pan the dough in an oven pan, mix sugar and powdered sugar and sprinkle generously twice, bake in an oven at 180 degrees (preheated for 20 minutes at 190 degrees) for 13 minutes and cool.
  5. Add water and sugar to coffee and mix.
  6. Add sugar to fresh egg yolk and whip until the color becomes light. Add mascarpone cheese and mix.
  7. Whip the egg white until it forms a horn, add it to the yolk mixture, and mix to make cream.
  8. Dip the lady finger cookies in coffee, spread them on the mold, pour the cream and flatten them.
  9. Repeat once more, put it in the mold and harden it in the refrigerator for 2 hours or more or overnight.
