How to make Lemon meringue pie (lemon tart)

Lemon meringue pie (lemon tart)

Ingredients

  • Tart sheet
  • Lemon zest for 1 serving
  • 230ml Water
  • 180ml Lemon juice
  • 150g sugar
  • Corn starch 56g
  • 50g Butter
  • 3 Egg yolk
  • 4 Egg whites
  • 1 ts Lemon juice
  • 100g Sugar

Instructions

  1. Prepare lemon juice and lemon zest.
  2. Put water + lemon juice + sugar + cornstarch in a pot and boil until thickened, then remove from heat.
  3. Add butter + lemon zest and mix until butter is melted, then add egg yolk and mix.
  4. Transfer to another bowl, cover with cling wrap, and cool in the refrigerator.
  5. Lemon cream on the tart sheet.
  6. Whip the egg whites in a bowl and when bubbles rise, add lemon juice and add sugar 3 to 4 times while whipping to make a hard meringue.
  7. After squeezing the meringue on the lemon cream, bake in an oven preheated to 200 degrees for 3-5 minutes.

Notes

  • Eggs and butter at room temperature for at least 1 hour
  • Tart frame: 20cm
