I wanted to make dacquoise, but I was wondering what kind of dacquoise to make. In the end, I made green tea dacquoise haha Personally, I find it delicious to eat only cookies without cream.

Ingredients

  • 80g egg whites Egg whites
  • Sugar 24g
  • Soft flour 3g Soft flour
  • Almond powder 48g
  • 48g Sugar Powder
  • Green tea powder 3g

Green tea pastry cream

  • 125g milk
  • Sugar A 15g Sugar A
  • Egg Yolk 30g Egg Yolk
  • Sugar B 15g Sugar B
  • 10g starch
  • Green tea powder 3g
  • 1/2 ts Vanilla extract
  • Sugar Powder

Instructions

  1. Put milk + sugar + vanilla extract in a pot and take it off the heat as soon as it boils.
  2. Put the yolk and sugar in a bowl and mix well, then add starch + green tea powder and mix well.
  3. Pour in the boiled milk mixture slowly, mix, sieve through a sieve, put it in a pot, and simmer over low heat until it becomes thick cream.
  4. Transfer to another bowl, wrap and cool in the refrigerator.
  5. Sift soft flour + almond powder + sugar powder + green tea powder.
  6. Whip the egg whites in a bowl and when large bubbles appear, add sugar 2-3 times to make a hard meringue.
  7. Add the sifted flour and mix gently with a spatula so that the meringue does not go out.
  8. Put the dough in a pastry bag and pan it in a pan.
  9. Sprinkle enough powdered sugar on the top, and when it melts to a certain extent, sprinkle once more,
    Bake in an oven preheated to 180 degrees for 10-12 minutes, then cool.
  10. Sand the cream.
