Fig Bavarois Pudding

Ingredients

  • ┏Gelatin powder 8g Gelatin powder
  • ┗ 45ml water
  • ┏Egg yolk 1 Egg yolk
  • |Sugar 30g Sugar
  • ┗ 125g Milk
  • 125g Plain yogurt
  • ┏ 1 Egg whites
  • ┗ Sugar 7g
  • Vanilla extract
  • fig
  • Maple syrup

Instructions

  1. Put gelatin in a small amount of water and soak it.
  2. Put egg yolk + sugar in a bowl and whip it, then add milk and mix.
  3. Transfer (2) to a pot and heat until it becomes hot, then remove from heat and add soaked gelatin to melt.
  4. After mixing yogurt and (3), soak the balls in ice water and cool them.
  5. In another bowl, add egg white and sugar and whip to make a meringue of about 60%, then add the meringue in (4) and mix,
    Add vanilla extract and mix.
  6. Spray the mold with water and pour (5).
  7. After hardening in the refrigerator for 1-2 hours, add figs and maple syrup.
