Handmade Tapioca Pearl (Boba) Recipe

I made two kinds of handmade tapioca pearls with tapioca starch, which are chewy and bouncy~
I mixed common pearl and cocoa powder to make a dark pearl, but it looks more appetizing when mixed together.

When you boil brown sugar and water and add starch, add it all at once and mix, the dough will flow without clumping.
Add a little starch to the sugar water, mix, put on low heat and boil until thick, then add all the remaining starch and mix to form a lump.

It doesn’t seem to stick well at first, but when you knead it with your hands, it becomes a smooth dough~^^
Boiling tapioca pearls, rinsing them in water, putting them in ice water and rinsing them once more gives them a firmer texture~

I boiled it in brown sugar syrup and stored it in a bottle, but you can omit the process of boiling in syrup~
I used 100% tapioca starch powder, but I think it’s safer and more delicious to make at home without any additives.

However, the process of making it is also complicated and takes a lot of time, so I can’t even think of making it again.
Just looking at it, the bright and plump visual seems to brighten my mood~~

Ingredients

  • 45g Brown sugar
  • 60g Water
  • 90g Tapioca starch
  • 50g Brown sugar
  • 60g Water
  • 85g Tapioca starch
  • 5g Cocoa powder
  • 70g Brown sugar
  • 140g Water

Instructions

  1. Put brown sugar and water in a pot and heat over medium heat until it boils. Turn off the heat and add a little tapioca starch and mix.
  2. Put it on low heat again and stir it. When it thickens, take it off the fire.
  3. Add all the starch, mix, place on a flat surface and knead until smooth by kneading with your hands. (Make the cocoa dough in the same way.)
  4. Divide the dough and roll it out long, cut it into small pieces and roll it in your hand to make a round shape.
  5. Coat with starch to prevent sticking, then boil in boiling water.
  6. Bring to a boil over medium heat, and when tapioca pearls appear, lower the heat to low and cook for 20 minutes while stirring.
  7. Remove from heat, cover with a lid, and steam for 20 minutes, then place on a sieve and rinse in cold water.
  8. Put it in ice water, rinse once more, put it in a pot, and add brown sugar and water.
  9. Bring to a boil over medium heat, and when it boils, reduce the heat to low, stir and boil for about 5-6 minutes until thickened, and place in a container.
