Green tea (Matcha) Chocolate chip Madeleine Recipe

I made a sweet green tea madeleine with chocolate chips studded in fragrant green tea madeleine.

Madeleine contains a lot of butter, so the buttery flavor is good and the green tea scent is subtle.

It is luxurious and neat by coating one side with white chocolate mixed with green tea powder.

When I baked it, I baked it at a high temperature and then lowered the temperature to bake it, but the belly button came up well and the color came out delicious~~

I baked it with chocolate chips to give it a lot of toast color, but if you want it to have less toast color, I think it would be better to lower the starting temperature and bake it~

I think it would be good to pan the dough about 80% in a pan, and after dipped in chocolate, put it in the freezer for at least 30 minutes to separate it neatly.

Green tea (Matcha) Chocolate chip Madeleine

Ingredients

  • 75g Egg
  • 65g Sugar
  • a pinch of Salt
  • 10g Honey
  • 2g Vanilla extract
  • 55g Cake flour
  • 15g Almond powder
  • 10g Green tea powder
  • 3g Baking powder
  • 80g Melted unsalted butter
  • 5g Lemon juice
  • 80g White chocolate
  • 3g Green tea powder

Instructions

  1. Mix eggs, sugar, salt, honey, and vanilla extract, then sift the powders and mix.
  2. Add melted unsalted butter, mix, add lemon juice, mix, cover with cling film, and ferment in the refrigerator for at least 1 hour.
  3. Put the dough in a pastry bag, grease with butter, sprinkle with flour, and pan the dough on a pan coated with chocolate chips.
  4. Bake in an oven preheated to 220 degrees for 4 minutes, 190 degrees for 3 minutes, and 160 degrees for 3 minutes, then remove from the mold and cool.
  5. Melt white chocolate in a hot water bath, add green tea powder, mix, and place in a piping bag.
  6. Squeeze the chocolate in a madeleine pan, put the madeleines on top, coat them with chocolate and harden in the freezer for about 30 minutes.
