Galettes Bretonnes Recipe

I made Galette Bruton, a French butter cookie.
I think it’s a cookie with a lot of butter and almond powder, so it’s savory and deep in flavor~

When you take one bite, you can feel the crunchy texture, and it tastes really good!
I heard it You can bake it using a dedicated mold, or you can bake it using a muffin mold or mousse ring.

If you bake without a frame, the cookies tend to spread a lot, so they don’t hold their shape and are not baked.
You have to cut it a little smaller than the frame to get the shape and bake it.

I think you need to apply enough egg yolk and make a pattern with a fork to get a clear and pretty shape when baked.

Galettes Bretonnes (French Butter Cookies)

Ingredients

  • 150g Unsalted butter
  • 75g Powdered sugar
  • 2g Salt
  • 25g Egg yolk
  • 2g Vanilla extract
  • 120g Cake flour
  • 70g Almond flour
  • 1g Baking powder

Instructions

  1. Soften unsalted butter, add sugar powder and salt, mix, then add egg yolk and vanilla extract and mix.
  2. Sift the soft flour, almond powder, and baking powder, mix, place on a Teflon sheet, spread out, and harden in the refrigerator for 1 hour.
  3. Cut the dough with a 5.5cm cutter, put it in a mold, apply egg yolk on the top, and make a pattern with a fork.
  4. Bake in a preheated 165 degree oven for 30 minutes.
