Fluffy Castella Cupcake Recipe

I made a cute castella cupcake with a swollen shape ~
It’s a basic cake that can be easily made and eaten, so I think it’s often made ~

Fluffy Castella Cupcake

Ingredients

  • 100g Egg
  • 65g Sugar
  • 10g Honey
  • 2g Vanilla extract
  • 25g Unsalted butter
  • 25g Milk
  • 80g Cake flour
  • 2g Baking powder

Instructions

  1. Place a bowl of eggs on a pot of hot water, add sugar, honey and vanilla extract and stir until the temperature reaches 40 degrees.
  2. Whip until a rich ivory-colored foam with a hand mixer, sift through the flour and baking powder and mix.
  3. Put a little bit of dough in a bowl mixed with melted unsalted butter and milk (temperature 50 ~ 60 ° C), mix, put into the main dough, mix, pour into muffin mold and air bubbles.
  4. Bake and cool for 20 minutes in a preheated oven at 170 degrees.
