Fig Yogurt Mousse Cake

Ingredients

  • 1/2 Fig
  • 95g Plain Yogurt
  • 5g Yogurt Powder
  • 25g Sugar
  • 1/2ts Lemon juice
  • 1/2ts Vanilla extract
  • 5g Leaf gelatine
  • 75g Whipped cream
  • 2 sheets of 7cm sponge cake
  • 2 Fig
  • 80g Figs boiled water
  • 10g Sugar
  • 2g Leaf gelatine

Instructions

  1. Dig out the flesh of 1/2 fig.
  2. Put plain yogurt, yogurt powder, sugar, vanilla extract, and lemon juice in a bowl and mix.
  3. Add (1) and mix, then add melted gelatin and mix.
  4. Add whipped cream and mix.
  5. Place the sponge cake sheet on the mousse mold and put the figs with the tops cut into them.
  6. Pour (4) and harden in the refrigerator for 1 hour.
  7. Mix the figs with boiled water and sugar, then add soaked gelatin and mix.
  8. Pour (7) over the hardened mousse and harden in the refrigerator for 2-3 hours.
